What a wonderful way to pass the time. Meany people like myself feel a better connection with nautre. Gardening is a way I make an excuse to take a minuet from my busy life to breath. I may not be good at but at lest I try. Gardening like most things in life; Practice makes perfect . I enjoy meany things like it. Your bare feet in the warm soil. Hot sun on your back as you rip the weeds from the ground. Giving life and neutering something that has needs. And finally the harvest .
After harvesting, is preserving, and than eating. Yum. Ultimately my husband and I would like to move to a homestead. Our goal is to be selfsustaining. This dose not happen over night! It's a constant learning evolution. The things we are dong to get ready for our homestead dream is for a whole other day. One of the ways to prepare is to test out canning recipes.
This is the first year Ive gotten enough in or garden to can. Gardening is another learning experience, for another day. It is no ware near enough to sustain us through the winter but it is a start! We are getting use this proses and if you do something wrong its best to do small batches and wright what we do different each batch with out wasting resources.
Since we are are just starting out I was using a water canner from my late mother in law. She was the canning queen. I would be so blessed to even be half as good as her. She left me ALL he canning supplies. I also got all the canning supply's from my late grandmother. I know I am lucky to have people who have canned befor me. Both of them did water bathed canned.
Back in the day, when my relatives were starting out cannng, water bath canning was the safest as compared to pressure canning. Now pressure canners have presure releases, gauges, safety latches and held to much high standards. Always read the directions the are still not ignorant proff. You have to educate yourself. What you chooses to use is up to you like I said I had a water a bath canner I was looking to upgrade to a pressure canner so we can safely presurve low acidic foods in jars. I got out all my canning materials to check them over befor we got started. I begin to fill my pot to start the water bathing. Set it next to my sink. All of a sudden there was a feeling of water on my feet. Guess were the water was coming from.
My water canner had a hole in it!!!!! Water was steadily coming out of a crack in the bottom of the pot. This is not ssomthing you want to deal with when you have everything ready to go. The good news is I got a new canner 88$ for a pesto 32 pressure canner. That's pretty good. I was so excited we got a pressure cooker. It was about time. Haha! As you get to know me you will find I'm so frugal. I will not buy anything new unless I HAVE to.
No to the fun part. The things we caned this year were: Apple butter (two batches) Salsa (two bathes) Pickels Pickeled beeets Refrigerator pickles
The cucumber pickels are not shelf stable meaning they have to go in the fridge. The other stuff is shelf stable . Yay. We are done for the season but this is our first batch of canning and 2 days of work. The salsa recipe was to sweet fo my tast but its the tomatos 🍅. Thanks for reading!
